Best. Vegan. Cookies. Ever.

Dairy/Egg/Nut-Free. Delicious.

A friend made these Chocolate Chocolate Chip Cookies for us a month ago & I've been making them about every other day since. Go make these today. Make sure you don't leave them in the oven too long. Much better when they are a wee bit soft.

2 cups all-purpose flour
2/3 c. unsweetened dutch-processed cocoa powder (i used regular cocoa powder)
1 teasp. baking soda
1/2 teasp. salt
2/3 c. canola oil
1 1/2 c. sugar
4 teasp. ground flax seeds
1/2 c. soymilk
1 Tablespoon vanilla extract
3/4 c. semisweet vegan chocolate chips

Preheat oven 350 degrees Sift flour, baking cocoa, baking soda and salt
In separate bowl, mix oil and sugar. Add ground flaxseeds, soy milk and vanilla. Mix well. Fold in flour mixture in batches until a stiff dough forms. Add chocolate chips to finished dough. Roll cookies into 1 inch balls and flatten into disks about 1.5 inches in diameter. Place on cookie sheet 1 inch apart - they don't spread out much. Bake 10 min.

Yes! It is difficult for a full-blooded junk- and choco-holic to find anything healthy but these cookies are yummy and addicting! Ethan and I could not eat them without a "yum-yum-yummy for our tum-tum-tummy" with every bite!

Carrie! Your comment cracked me up! I don't think we HAVE met technically! I looked for you this a.m. at Church but didn't see you. We shall meet soon! If nothing else, I am on praise team memorial day weekend. I am the alto with ridiculously curly hair. :) And that's so cool about the cantelope!!!
