Purple Beans


Thanks to my local farmer, this week I'll be making:

Tomato Soup, Fresh Salsa, Eggplant Parmesan, Fried Okra, Greek Salad, Fried Cabbage, Purple Beans, Cucumber Salad, and LOTS OF CORN!

Correction: We actually recieved Purple Hull Peas, not beans. Click here & you can see why I was confused!

I'll let you know! I have read that they turn very green while cooking. Aren't they interesting?

Whoa...at first I thought those purple beans were worms crawling out of the bucket! I had to do a serious double take!

We have a local farmer that sells purple beans at the farmers market and they turn green when you cook them. I can't tell a difference in taste either. I often will mix them with regular green beans and they are great. I'm sure you will enjoy them.

Those purple beans remind me of endless summers at my grandparents farm... Can I come over for fried okra night? YUM!!!!!

CORRECTION! We actually received purple hull field peas. They look remarkably like the purple beans. I'm glad I noticed before I boiled them & served them to our company tonight, which I was close to doing! Now I have to make a new game plan for tonight.
