This week we'll be eating in abundance. My folks (with whom I split a 1/2 bushel) are traveling, so I get their produce. Think we can eat all this food in one week? We've got....8 ears of corn, 2 banana peppers, 4 green bell peppers, 2 purple bell peppers, 3 patty pan squash, 6 tomatoes, 1 container of yellow cherry tomatoes (?), 4 carrots, 12 okra, 2 eggplants, 1 head of cabbage, a cantaloupe, watermelon, and 8 lemon cucumbers. Whew!

Yum! I am so sick of eating out right now. Since we have been out of town, on the road, and getting settled I haven't been able to cook much! So those veggies look especially delicous to me right now!
what do we do with the lemon cucumbers?
My box was really bad this week. :(
I peeled & seeded them & made a cucumber salad, similar to this one. You can use them any way you'd use a regular cuke. I'm not a huge greek salad fan, but I did also make the salad below, and it was pretty good. Did you get the crazy purple beans? I didn't, but a friend did.

Also, rachel. Did you know you could freeze bell peppers? I heard you could just throw them right in the freezer, as is. I'm going to do this, b/c there is NO WAY I can use up 6 in one week!!!
Just start having more babies, Carrie, and then all that food will be gone in no time!! ;)
Oh, we're planning to make it on the third;)
Carrie, I would freeze what you don't use up if possible. The squash can be cut up and frozen as well as the peppers, tomatoes, corn and even the eggplant, I think. I wish Winchester had a CSA, but we do have the Farmers Market on Saturday morning. That's as close as it gets and you have to go around to each stand and pick what you want. Your way seems to force you to be creative with what you have. Great recipes come from being forced to be creative. Enjoy!
no purple beans for me. thanks for the recipes. I think I'll make it tonight!
In years past, I've wanted to join a CSA but never felt like I could because Zane and I travel so much. However, last fall I ran across this local coop:
www.freshharvestcoop.com
It's different in the fact that you don't have to get produce each week. You keep an account with them, they send you an e-mail each week of what is available, and you just reply w/ your order of what you want and in what amount. Not sure how it compares pricewise w/ other CSAs, but at least you only order what you want and can experiment w/ new foods at your own pace.
One more thing that I think is interesting. (Carrie, you may have already blogged about this.)
Eating Organic on a Food Stamp Budget
There are great ideas for recipes to use up all your fresh produce. Of course the writer lives in Northern CA, so she gets a larger variety from her coop.
ok. I'll stop now.
