CSA, Week 14 (15 Missing)

Pictured above are last week's veggies. And I did not get a picture of this week's veggies & gave most to my mama. This week's share (Week 15) was very similar. So last week we received cantaloupe, eggplant, green beans, pattypan squash, green peppers, onion, tomatoes, cucumbers, peaches, squash, corn & potatoes. SO Delicious! The CSA looks alot different than it did this spring!

there is an awesome recipe for Eggplant Patties from "Essentials of Classic Italian Cooking" by Marcella Hazan. That cookbook (which I recommend) has other eggplant recipes also. I have been unable to find it posted on the internet, and don't have time, but can get it to you next week.

I have also tried a recipe from Martha for "Eggplant Fritters" (essentially the same thing.) It had tons more ingredients, and wasn't as good as the Hazan recipe. But you might want to try something along those lines. The Eggplant Patties are SO delicious!!!!

There is a recipe in the Climb Nashville cookbook for Eggplant Lasagna. I haven't tried it yet.

Eggplant dips are fun if you are having company over.

Caroline Martin had a recipe on her blog which was good. Eggplant & Ground Turkey.

Moussaka has eggplant in it too. Delicious!!!!

Anyone else have favorite eggplant recipes?

See, here I am, reading your blog right now! Meanwhile, you are declaring blogging dead?! I learn quite a bit about food from reading your blog.
(not a fan of eggplant, though.)
